MMmmmmm…. Chocolate Cake

I will be honest… I am not the biggest cake fan. BUT honestly, this chocolate cake recipe is so yummy. My friend Amanda razzle dazzled us with this awesome cake on Friday night and I just had to share it with you. The icing is really thick and fudge-like, so if you like your icing softer, just add more water to the recipe. -But I recommend making it just as it is written. Enjoy!

Scotch Chocolate Cake

Cake Instructions

1.) Sift together:

2 cups flour

2 cups sugar

1 teaspoon soda

1 teaspoon cinnamon

1 teaspoon salt

 

2.) Bring to a boil and add to the above ingredients:

1/2 lb oleo or margerine (1 stick)

1/2 cup shortening

4 tablespoons cocoa

1 cup water

 

3.) Then add and mix well:

1/2 cup buttermilk

2 eggs beaten

 

4.) Bake at 375 degrees for 35 minutes.

Icing Instructions

1.) Bring to a boil:

1/4 cup margarine (1/2 stick)

4 Tablespoons cocoa

3 Tablespoons of water

 

2.) Gradually add:

1 lb. of powdered sugar

1 Tablespoon of water to get desired consistency

 

3.) Stir in:

1/2 cup Pecans

1/4 teaspoon salt

1/2 teaspoon vanilla

 

4.) Ice cake while hot.
