Menu Planning Mayhem (September 26-October 1)

“She is like the ships of the merchant; she brings her food from afar. She rises while it is yet night and provides food for her household…” (Proverbs 31:14-15 ESV)

I’m taking it a little slow this week. The little ones have been battling colds and my back has been a wreck the past couple days. Needless to say the less time on my feet the better!

I don’t have a blog post to link to, though I probably should :) But here is our week:

    breakfasts:

oatmeal (I add ground flax seed to instant oatmeal, that way I don’t feel as guilty)
toast and egg (whole wheat toast) (I also add a little of the flax to the egg, the kids don’t even notice it!)

    lunches:
3 of my kids go to our church school (I make their lunches) so for me and my 4 year old (who only goes one day a week) it’s whatever is on hand. For the other kids:

homemade bean and cheese burritos with fruit
ham or turkey sandwiches on mini-whole wheat pitas
    (with fruit and crackers)
    leftover chicken, fruit and crackers
    leftover beef and potato pies

    Dinners:
shredded beef tacos (left over pot roast from tonight)
    eggplant parmesan
beef and potato pies (hand held)
    homemade chicken tenders, green beans
